This is a traditional forged knife made by a second-generation blacksmith with highly skilled and continuing forging abilities. The Aogami Steel no.2 used in this knife is a superlative steel for professional knives, making it extremely sharp and retaining its sharpness for longer periods of time. The shape of the knife has been slightly altered to make it more useful for cutting, but it is prone to rust and requires regular maintenance. Please note that since this is a handmade item, there may be small irregularities and we do not accept returns or claims for minor flaws.
The blade length is approximately 210mm (8.3 inches), the entire length is 365mm (14.4 inches), and the weight is about 159g (5.6oz). The blade is made of Aogami Steel No.1, a high-carbon steel with a hardness of around HRC62 +/- 1. It is very sharp and has a double bevel, suitable for both right and left-handed users. This knife is ideal for cutting meat, fish, vegetables, and fruits. The handle is made of walnut and has an octagonal shape, handmade by Tosa craftsmen. The rough appearance, known as Kurouchi, reflects the spirit of the Tosa craftsmen. Despite having small scratches, flaws, or bends, these are the hallmarks of a handmade item. This product may appear rougher than machine-made knives, but the quality is exceptional and cannot be replicated by machines.
Aogami Steel is excellent for cutlery tools due to its ability to retain a sharp edge. Regular maintenance with a sharpening stone is necessary to keep the knife sharp. This knife is proudly made in Japan, and lovers of Japanese handmade items are encouraged to experience the craftsmanship that goes into creating each knife.
